Valentine’s Day Red Apple Rose Puffs

Ingredients

  • 1 tablespoon of melted butter
  • 1 Bramley apple, peeled, cored and cut into small chunks
  • 2 tablespoons caster sugar
  • 1 teaspoon ground cinnamon
  • 2 red eating apples
  • The juice of 1/2 a lemon
  • 1 small sheet of ready-rolled puff pastry
  • 2 tablespoons strawberry jam
  • 1 teaspoon water
  • Icing sugar for dusting

Method

  1. Lightly grease a 12-hole muffin tin with melted butter.
  2. Cook the apple chunks in a small pan with caster sugar and cinnamon until soft. Remove and cool completely.
  3. Slice the red apples in half lengthwise, remove the cores, and thinly slice them into half-moon shapes (about 2mm thick). Place the apple slices in a microwave-safe bowl with a squeeze of lemon juice and enough water to cover. Microwave for 2 - 3 minutes until soft. Drain and pat dry with kitchen paper.
  4. Preheat the oven to 190°C /170°C fan/ Gas mark 5.
  5. Roll out the puff pastry and cut it into four long horizontal strips approximately 8cm wide. Then, cut each strip in half vertically to make eight thin strips.
  6. Spoon a small amount of the cooled apple puree along the middle of the pastry strip. Place apple slices along the edge of each pastry strip, slightly overlapping, and allow the rounded red edge of the apple to lie over the edge of the pastry.
  7. Fold the bottom half of the pastry strip over the apple slices. Starting at one end, carefully roll the pastry strip into a spiral to form a rose shape. Place each rose into a muffin tin hole.
  8. Bake in a hot oven for 25 - 30 minutes or until the pastry is golden and crisp.
  9. While the roses are baking, boil the strawberry jam and water in a small saucepan until it thickens and bubbles. Brush the warm jam over the apple roses as soon as they come out of the oven for a shiny finish.
  10. Dust with powdered sugar before serving.
  11. Serve with whipped cream or vanilla ice cream.
