SWEET AND SPICY AIR FRYER BRUSSELS SPROUTS

Ingredients

  • 400g Brussels sprouts, cut the large ones in half
  • 1 tbsp Olive oil
  • 2 tbsp Soy sauce
  • 1 tbsp Maple syrup
  • 1/2 Lemon, juiced
  • 1 Garlic clove, crushed
  • 1 tbsp Sriracha sauce
  • 200g King prawns, cooked
  • 60g Cashew nuts, chopped

TO SERVE

  • 2 Scallions, finely chopped
  • 1 Small red chilli, deseeded and finely chopped

Method

  1. Mix the olive oil, soy sauce, maple syrup, lemon juice, garlic, and sriracha in a large bowl. Add the brussels sprouts and coat in the sauce.
  2. Heat a large wok or frying pan over medium heat.
  3. Add in the brussels sprouts and stir fry for 10-12 minutes until the sprouts are tender and the sauce has reduced to a sticky consistency.
  4. Stir in the king prawns and warm through, before adding the cashew nuts.
  5. Add to bowl and sprinkle with scallions and chilli before serving.
