Pan-fried Strawberries with Orange and Mint

  • 500 ml freshly squeezed orange juice
  • 2½ tablespoons of honey
  • 1 large punnet of strawberries, cut in half
  • 1 large punnet of raspberries
  • A handful of fresh mint, finely chopped
  • 200 ml vanilla bean ice-cream


  1. Place the orange juice and honey into a saucepan, bring to a boil and cook for 15 minutes until the sauce has reduced from 500 ml to 100 ml. It will become thick and syrupy.
  2. Add strawberries to the syrup and warm for 1 - 2 minutes.
  3. Stir in raspberries and mint.
  4. Spoon the warm strawberries and raspberries into bowls. Top with ice cream, drizzle with sauce and serve immediately.
