One Pot Cheesy Mexican Beef

Ingredients

  • 1 tsp Rapeseed oil
  • 1 Onion, peeled and thinly sliced
  • 1/2 Red pepper, deseeded and sliced
  • 1/2 Yellow pepper, deseeded and sliced
  • 125g Mushrooms, sliced
  • 750g Beef mince
  • 2 Garlic cloves, crushed
  • 1/2 Teaspoon chilli flakes
  • 1 Packet of taco seasoning
  • 1 x 400g Tin of chopped tomatoes
  • 200g Black beans, rinsed, drained
  • 100ml Beef stock
  • 150mg Mozzarella cheese, grated

Method

  1. Heat the oil in a large deep ovenproof frying pan over high heat and fry the onion until soft. Then add the peppers and mushrooms and cook for a few minutes until golden and soft.
  2. Add beef, stirring with a wooden spoon to break up any lumps, for 3 - 5 minutes or until browned.
  3. Stir in garlic, chilli and taco seasoning. Stir in chopped tomatoes, beans, sweetcorn kernels and stock. Cook, stirring, for 3 - 5 minutes or until thickened slightly.
  4. Meanwhile, preheat the grill to high.
  5. Sprinkle with Mexican beef with cheese and place under the grill for 2 - 3 minutes or until the cheese is golden.
  6. Top with coriander, feta and chopped tomato.
  7. Season and serve with a side salad and lime wedges.

To Serve:

  1. A handful of Coriander, chopped
  2. 100g Feta, crumbled
  3. 1 Tomato, roughly chopped
  4. 1 Salad of lettuce, tomato, and cucumber
  5. 1 Lime, cut into wedges
