Mushroom and Spinach Toast


  • 1 tablespoon olive oil
  • 200g mushrooms, sliced
  • 150g baby leaf spinach
  • 2 garlic cloves, crushed
  • 4 eggs
  • 100g cheddar, grated
  • Sea salt and freshly ground black pepper
  • 4 large slices of sourdough bread


  1. Preheat oven to 180oC (fan 160oC) Gas mark 4.
  2. Heat olive oil in a large frying pan over moderate heat.
  3. Fry the mushrooms until golden, add spinach and garlic cook for 1 - 2 minutes.
  4. Break the eggs into a large bowl and whisk them together. Stir in grated cheese, mushrooms and spinach. Season and mix well.
  5. Arrange sourdough slices onto a baking tray, spoon the mushroom, spinach and egg mixture over the bread and place into a hot oven for 15 minutes until crisp and golden.
