GRILLED MEDITERRANEAN VEGETABLE SALAD

Ingredients

TO SERVE

  • 1 Red onion, cut into wedges
  • 1/2 Red pepper, deseeded and cut into chunks
  • 1/2 Yellow pepper, deseeded and cut into quarters
  • 200g Tomatoes, cut into quarters
  • 1 tsp Olive oil

FOR THE VINEGARETTE DRESSING

  • 3 tbsp Balsamic vinegar
  • 2 tbsp Olive oil
  • 1 tsp Dijon mustard
  • 90g Mixed salad leaves
  • 8 Scallions, finely chopped
  • 80g Blue cheese
  • 30g Green olives, pitted
  • 30g Pine nuts, toasted
  • A handful of Basil leaves

Method

  1. Preheat an air fryer to 200°C.
  2. Arrange the courgettes, peppers, tomatoes, and onion in the air fryer. Drizzle with the olive oil and season with salt and pepper.
  3. Cook for 10-15 minutes or until the vegetables are tender and beginning to caramelise.
  4. Mix the balsamic vinegar, olive oil and Dijon mustard together to make the dressing.
  5. To serve, arrange the mixed salad leaves onto a plate and top with the cooked vegetables. Sprinkle with blue cheese, scallions, olives, pine nuts and fresh basil leaves before serving with the vinaigrette dressing.
