Easiest Ever Apple Tart

Ingredients

  • 1 Sheet of all butter puff pastry (shop-bought or homemade)
  • 60g Butter, diced, at room temperature
  • 55g Caster sugar
  • 1 tsp Vanilla extract
  • 1 Egg
  • 55g Ground almonds
  • 2 tbsp Plain flour
  • 2 Bramley apples, cored, halved
  • 1 Punnet blackberries, cut in half
  • 20g Butter, melted
  • 1 tbsp Caster sugar
  • Icing sugar (for dusting)

Method

  1. You will need a large baking tray and baking parchment.
  2. This delicious tart can be made with Bramley’s apples or eating apples
  3. Preheat oven to 190°C/(170°C fan)/ Gas mark 5
  4. Line a large baking tray with baking parchment.
  5. Use a lightly floured rolling pin to roll out the pastry on a lightly floured surface to a 26 x 30cm rectangle. Transfer to the prepared tray and place in the fridge until required.
  6. To make the filling, use an electric mixer to cream the butter and sugar until pale and creamy. Add the vanilla and egg with the flour and gently fold in. Stir in ground almonds and mix until smooth.
  7. Cut the apples in half, remove the core and thinly slice.
  8. Spread the almond mixture over the pastry, leaving a 1.5cm border. Arrange overlapping apple slices and blackberry halves in rows on top of the mix.
  9. Brush with melted butter and sprinkle with caster sugar.
  10. Bake for 30 minutes or until the pastry is golden and the apple is tender.
  11. Dust with icing sugar and serve with ice cream or whipped fresh cream.

To Serve:

Vanilla ice cream or whipped fresh cream
