Classic All-Day Burrito

Classic All-Day Burrito


  • 1 tsp Rapeseed oil
  • 1 Onion, peeled, halved and sliced
  • 250g Mushrooms, cleaned and sliced
  • 1/2 Red pepper, seeds removed and sliced
  • 1/2 Yellow pepper, seeds removed and sliced
  • 2 Garlic cloves, crushed
  • 4 Bacon rashers
  • 8 Free-range eggs
  • 2 tbsp Cream
  • 1 tbsp Chopped chives
  • 4 Soft tortilla wraps
  • 1 Small lettuce, washed and shredded
  • 2 Tomatoes, sliced
  • 100g Grated Irish cheddar cheese
  • 2 Tablespoons chilli jam or sriracha sauce


  1. Heat the oil in a large non-stick frying pan and fry the onion until soft, add mushrooms and cook until golden.
  2. Add the peppers and garlic and cook for 2 - 3 minutes until the peppers begin to soften.
  3. Grill the bacon until crisp.
  4. Whisk the eggs, cream and chive in a jug. Season. Pour into pan and use a wooden spoon to stir gently for 3 minutes or until almost set.
  5. Top the tortilla wraps with layers of onion, mushroom, peppers, bacon, egg, tomato and cheddar. Finish with shredded lettuce and chilli jam.
  6. Roll up the filled tortilla wraps and serve immediately.
