Eoin Sheehan’s Buffalo Cauliflower Wings


  • 1 head of cauliflower
  • 100g flour
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic granules
  • Salt & Pepper
  • 200ml buttermilk
  • 1 tbsp butter
  • 100g hot sauce
  • 1 tbsp honey


  1. Prep the cauliflower into smaller neat florets.
  2. Add the seasonings to the flour and whisk in the buttermilk to the dry ingredients to make a batter.
  3. Coat the cauliflower in the batter and place it on a lined baking tray. Bake at 200 degrees C for 20-25 minutes until golden and roasted.
  4. For the hot sauce: heat the butter in a pot and add the hot sauce and honey. Allow simmering gently for 5 min until a shiny hot sauce glaze is formed.
  5. Place the roasted cauliflower into a bowl and toss with the hot sauce glaze.
